Abstract

食品相关问题已成为全球急需解决的问题,现代农业生产中农药残留超标将严重影响食材的质量与安全。农药残留超标不仅阻碍了食品质量安全,且会在人畜体内有慢性积累性毒性或致畸、致癌、致突变等。因此,研究分析食品中的农药残留对食品安全具有重要意义。铜纳米簇由于具有超小的尺寸,因此表现出类分子的荧光性质,已广泛应用于光学传感、生物成像、环境监测及光学催化等领域。与其他荧光材料相比,铜纳米簇具有大的Stokes位移、良好的生物相容性、独特的发光性能、合成方法简单等优点1,2。基于铜纳米簇,我们将其与酪氨酸酶相结合,从而构建新型生物酶荧光检测系统用于快速检测农药残留。该荧光传感系统可以实现对有机磷类农药的痕量检测,酪氨酸酶催化多巴胺的产物可以使铜纳米簇荧光猝灭,而有机磷加入可以抑制酪氨酸酶活性从而使荧光恢复,仅加入1μM浓度的有机磷即可恢复荧光恢复约70%。该方法为食品质量安全现场分析提供了一种有效的潜在手段。
